Malting
Grain or barley is soaked in water and allowed to germinate (sprout). This process activates enzymes that convert the grain’s hard starches into fermentable sugars. The germination is halted by drying the grain in a kiln.
Milling
The dried malted grain is fed into a mill and ground into a coarse, flour-like consistency called "grist".
Mashing
The grist is mixed with hot water in a large vessel called a mash tun. The hot water activates the enzymes, dissolving the starches into a sweet, sugary liquid called "wort". The solid leftover grain (draff) is often recycled as cattle feed.
Fermentation
The warm wort is transferred into large vessels called washbacks. Yeast is added, which feeds on the sugars and converts them into alcohol and carbon dioxide. After 48 to 72 hours, this creates a low-alcohol (around 8% ABV) liquid known as "wash".
Distillation
The wash is heated in copper stills to separate and concentrate the alcohol. The shape and size of the stills largely dictate the final character of the whisky.
Maturation (Aging)
The colorless new make spirit is reduced with water to a specific proof and poured into oak casks. Over the years (a legal minimum of 3 years for Scotch), the wood breathes, mellowing the harsh spirit and extracting rich flavors, colors, and tannins.
